thin mints! haha, or at least that's my weakness. homemade thin mints didn't come out too great. definitely invest in some good cocoa powder and a rolling pin to get them thin. the small rings are what happens when you add a lot of peppermint extract like i did :p
Chocolate Wafers: 8 ounces organic butter, room temp 1 cup organic powdered sugar 1 teaspoon natural vanilla extract 1 cup cocoa powder 3/4 teaspoon fine grain sea salt 1 1/2 cups whole wheat pastry flour
Chocolate Peppermint Coating: 1 pound good quality semi-sweet chocolate, chopped 1/4 teaspoon plus a couple drops of natural peppermint extract
